Ingredients
1cupwhole milk
2 1/4teaspoonsactive dry yeast
1/2teaspoonsugar
1/3cuphoney
1/2teaspoonsalt
1large egg + 1 egg yolk
3 1/2cupsall-purpose flour
Instructions
Lightly grease the bottom and sides of a large mixing bowl. Set aside. Lightly butter a 9x13 baking dish. Set aside.
Warm the milk to 110°F on a stove top or microwave (be careful not to get the milk too hot or it will kill the yeast). Whisk the warm milk, yeast, and sugar together in the bowl of a stand mixer. Cover and let sit for 5-10 minutes. After this time the mixture should be frothy and foamy.
Add the honey, salt, egg, egg yolk, and 2 1/2 cups flour. Beat on low speed with the dough hook attachment for 1 minute, scraping down the sides of the bowl with a rubber spatula if needed. Add another 1/2 cup flour and mix an additional 1 minute, then add the remaining 1/2 cup flour and mix for another 1 minute.
Increase the mixer to medium speed for 1-2 more minutes until the dough pulls away from the sides of the bowl and will cling to the dough hook.
Turn the dough out to your prepared mixing bowl. Coat all sides of the dough by turning it in the bowl. Cover with aluminum foil, plastic wrap, or a clean dish towel, then let sit in a warm place to rise for 1-2 hours. The dough should double in size.
When the dough has doubled in size remove the towel and punch down to remove any air bubbles. Remove the dough from the bowl to a lightly floured surface. Using a knife or dough scraper, cut the dough in half. Then cut each half into 8 equal pieces to make 16 total pieces. Shape each piece into a ball and arrange in the prepared 9x13 baker. Cover this with your dish towel and allow to rise about another hour to double in size again.
Preheat you oven to 350°F and bake the rolls for 18-22 mnutes, until golden brown on top and the sides and edges look baked. Remove from oven and brush with butter while still warm.
